Potato Soup
What You'll Need:
- Bacon
- 6 Potatoes
- 1 Large Onion - Chopped
- Salt and Pepper to taste
- Red Pepper Flakes - 2 shakes just to add a little kick
- 2 tablespoons Garlic
- 1/2 Cup Shredded Cheddar Cheese
- 2 cups Milk (I use Skim Milk to keep it on the lighter side)
- 2 cups Gluten Free Chicken Broth
- 1/2 Cup Shredded Cheddar Cheese
Get Cooking:
- Stab potatoes with a fork and put in the microwave until they are soft - this normally takes about 10-15 minutes. Let cool
- Cook bacon in the same pot you will be making the soup in. Drain all but 1/8-1/4 cup of the bacon grease for pot.
- Add the onion, salt, pepper, and red pepper flakes to pot and saute until translucent.
- Add in chopped garlic and saute another 2-3 minutes.
- Put 2 potatoes with skin in a large bowl and mix together like mashed potatoes. Scoop out the potato of the other 4 potatoes and add to mixer.
- Add the gluten free chicken broth and milk and add the potatoes and simmer for 10 minutes
- Add the cheese and cook for another 5 minutes.
- Finished! Now enjoy your potato soup! :)
